Spaghetti Carbonara

 Ingredients

- 225g/ 8oz Glutafin Spaghetti
- 4 Rashers lean smoked back bacon
- 1 x 15ml tbsp Extra virgin olive oil
- 2 Medium size eggs (use free range organic for ultimate flavour)
- 150ml/ ¼pt Single cream
- 25g / 1oz Fresh grated Parmesan
- ¼ x 5ml tsp Ground black pepper
- 1 x 15ml tbsp Fresh chopped parsley

 Method

Cook Glutafin spaghetti in a large pan of boiling water following on pack instructions until just al dente, or translated literally "just with bite". Drain in a colander and rinse with cold water. Set aside.

Prepare sauce. Dice bacon into even squares. Lightly fry in a medium sized frying pan for 5 minutes or until golden.

Whisk eggs with remaining ingredients and add to the cooked bacon and warm through until just simmering without curdling the egg. Gently add spaghetti to the pan, stir gently to mix together and serve immediately.
