A light version of a fruit cake baked in a large shallow tin and served in squares. A brilliant healthy snack for picnics and packed lunches and for hungry mouths on the return from a busy day at school.

Ingredients
2 Medium size cooking apples, peeled, cored and diced to give 275g/10oz of prepared diced apple
110g/ 3 ½ oz butter
4 x 15ml tbsp water
110g/ 3 ½ oz soft dark brown sugar
125g/ 4oz raisins
250g/ 9oz Glutafin Select Fibre Mix
1 ½ x 5ml tsp Gluten-free baking powder
1 x 5ml tsp Ground mixed spice
2 medium eggs, lightly whisked
25g/ 1oz Demerara for sprinkling
Method
Place diced apple, butter and water in a large mixing bowl. Cover and microwave for 5 minutes to soften the apple. Mash lightly with a fork.
Add the raisins and sugar, cover and cook for a further 5 minutes.
Leave for 1 hour to cool. Mash with the fork to break up any remaining apple pieces.
Stir in the remaining ingredients with a wooden spoon.
Pour into a 30 x 23cm/ 12 x 9" shallow baking tin lined with bakewell paper. Sprinkle with the demerara sugar and bake until golden and just firm to the touch.
Cut into squares and once cool store in an airtight tin layering between greaseproof paper.
