Toad in the Hole with Tomato Onion Gravy

Toad in the HoleA real winter classic. The batter is made in a very different way the standard ones, but, results in a delicious light and crispy dish.
Many supermarkets now sell gluten-free sausages but check in your Food and Drink Directory for the brands available.

Makes: 1 "Toad" to serve 4
Preparation time: 30 minutes
Cooking time: 45 minutes
Ingredients

450g/1lb Gluten free pork sausages

Batter 

  • 6 x 15ml tbsp Light and mild olive oil
  • 300ml/½ pt Water
  • 175g/6oz Glutafin Select White Mix
  • Pinch Salt and ground black pepper
  • 4 Large eggs, whisked

Tomato Gravy 

  • 1 x 15ml tbsp Light and mild olive oil
  • ½ Red onion, finely sliced
  • 50g/ 2oz Baby plum tomatoes, quartered
  • 300ml/½pt Water
  • 5 x 15ml tbsp Tomato ketchup
  • 1 x 15ml tbsp Balsamic vinegar
  • 1 x 15ml tbsp Cornflour mixed to a paste with 1 x 15ml tbsp cold water.
Method

Preheated oven at 200°C/180°C Fan/400°F/Gas Mark 4 for first 25 minutes and then reduced to 160°C/150°C Fan/325°F/Gas Mark 3 for 20 minutes.

  1. Grill sausages to drain away some of the fat on a medium temperature setting for 10 minutes. Place in a medium size ovenproof dish.
  2. Meanwhile prepare the batter. Heat the oil and water together for 3 - 4 minutes in a large bowl in the microwave until simmering. Stir in the Select Mix and seasonings with a wooden spoon to make a thick smooth paste.
  3. For ease place paste in a food processor and gradually pour in the eggs whilst the machine is on a medium speed.
  4. Mix on maximum speed for a further 30 seconds. Alternatively beat in the eggs using a wooden spoon.
  5. Spoon the thick batter over the sausages.
  6. Oven cook for 45 minutes reducing the temperature after 25 minutes.
  7. The mixture puffs up and browns quite rapidly but needs the full cooking time to cook through to the centre.
  8. Prepare the gravy.
  9. Simmer the sliced onions in the oil with 3 x 15ml tablespoons of the water for 5 minutes to soften. Add remaining gravy ingredients and bring to a gentle simmer for 5 minutes stirring constantly until thickened.
  10. Divide toad into 4 and serve topped with the gravy and a mixed vegetable      selection.
